Cook for about 1 hour: this makes your soup stock. -Next, remove the sausage and let cool and then chop it into bite-sized pieces. -Now add the baby potatoes (chopped into bite size pieces) green onions, dill, sorrel, bay leaf and pepper. Cook until the potatoes are done. -Now add the farmer sausage back to the pot.

Summer Borscht (Mennonite Soup) (Great way to use the leftover ham bone and ham from Thanksgiving) 2 quarts soup stock made by boiling ham bone for at least a couple hours. I also put in at least 1/2 onion, carrot and a celery stick quartered, as well as a big handful of fresh dill greens and parsley, a little bit of salt and 3-4 pepper corns.

In a large skillet, brown hamburger. Season well with salt and pepper. Transfer cooked hamburger to a soup pot and add water. Return the skillet to the stove and sauté carrots, potatoes, parsnips and celery until tender. Add cooked vegetables to the soup pot and then add remaining ingredients. Bring soup to a boil and then reduce to a simmer.

Ingredients 5 cups diced red potatoes 7 cups water 4 teaspoons salt 1 ¼ cups green onions, chopped ⅓ cup chopped fresh dill 2 cups buttermilk 1 cup half-and-half Directions Place diced potatoes into a large saucepan, and cover with water. Bring to a boil over high heat, then reduce heat, and simmer until potatoes are tender, about 25 minutes.

INSTRUCTIONS Stock: Boil ham bone and farmer sausage in water for approx. 2 hours. If the broth isn't tasty enough for you, add some liquid chicken bouillon when boiling. Cool. Take fat off the top.
